Ingredients
- 1 tablespoon olive oil
- 1 cup chopped onions
- 2 cloves garlic, minced
- 3 cups chicken stock or broth or vegetable broth
- 1 large zucchini, shredded
- 2 tablespoons minced fresh basil or 1 teaspoon dried basil
- ½ teaspoon grated nutmeg
- Salt to taste
- Freshly grounded black pepper to taste
- 1 tablespoon lemon juice
Method
- Heat the olive oil in a saucepan over medium heat.
- Add onions and stir-fry for about 5 minutes or until onions are soft but not brown
- Add garlic and stir-fry for another 1 minute
- Add stock or broth, zucchini, basil, nutmeg, salt and pepper then cook for about 15 minutes.
- Let it cool for 5-10 minutes.
- Ladle half into a food processor or blender and process until pureed before returning them to the saucepan.
- Repeat the same steps for the remaining half.
- Stir in lemon juice before serving.
