Allergy-free Zucchini Bisque Recipe

This is an allergy-free and delicious zucchini bisque recipe that contains no wheat and no milk.

Ingredients
  • 1 tablespoon olive oil
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 3 cups chicken stock or broth or vegetable broth
  • 1 large zucchini, shredded
  • 2 tablespoons minced fresh basil or 1 teaspoon dried basil
  • ½ teaspoon grated nutmeg
  • Salt to taste
  • Freshly grounded black pepper to taste
  • 1 tablespoon lemon juice

Method
  1. Heat the olive oil in a saucepan over medium heat.
  2. Add onions and stir-fry for about 5 minutes or until onions are soft but not brown
  3. Add garlic and stir-fry for another 1 minute
  4. Add stock or broth, zucchini, basil, nutmeg, salt and pepper then cook for about 15 minutes.
  5. Let it cool for 5-10 minutes.
  6. Ladle half into a food processor or blender and process until pureed before returning them to the saucepan. 
  7. Repeat the same steps for the remaining half.
  8. Stir in lemon juice before serving.
